Black Beans Protein Bars

Ingredients

  • 1 can of black beans (460g)
  • 1 cup and 1/2 rolled oats
  • 1 cup of unpitted dates
  • 4 scoops Vanilla protein powder (60-80g)
  • 1/3 cup of 100% cacao powder
  • 1/3 cup of maple syrup
  • 1/2 cup of vegan chocolate chips
  • a pinch of salt

Steps

  1. Open the black beans can, drain and save the liquid (know as "aquafaba"). Rinse the black beans off, and reserve.
  2. Add the rolled oats on the blender. Make a few pulses on the blender, not really to make flour, but to pulse them into smaller bits.
  3. Add the black beans and the unpitted dates on the blender. Press the dates to make sure they are really unpitted. Mix everything together on the blender.
  4. Add the protein powder, the cacao powder, and maple syrup. Mix until the blender starts to get slow and stop. Add about a cup of the "aquafaba" initially reserved, and pulse a few times. Add more "aquafaba" and a pinch of salt, and mix it again until it becomes smoother.
  5. Pre-heat the oven at 180 °C. Add parchment paper on a medium size tray, and pour the mixture on top of it, and spread evenly. Add the chocolate chips on top and leave it in the oven for about 30 minutes.
  6. Let it cool for 30 minutes. Take it out of the tray and the paper. Cut it in small protein bars and enjoy!
