Marinated Pork Tenderloin with Mango and French Beans
Ingredients
50 ml Soy sauce
2 garlic cloves, pressed
1 thumb of ginger, rasped
1 tablespoon sugar
2 tablespoons sesame oil
1 lime, rasped peel
800g pork tenderloin
250g french beans
1 mango, peeled & cut into thick slices
A pinch of dried chili flakes
1 lime, the juice
1 handful of fresh parsley, chopped
1 handful of fresh basil, chopped
Hoisin sauce
Sesame seeds
Steps
Marinate the pork tenderloin and let it rest in an oven tray in the fridge for minimum 1 hour.
Boil the beans for 4 minutes. Take them out of the boiling water and put them in ice cold water to keep them crispy and green, otherwise they become soft!
Preheat the oven to 200°C. Heat up a bit of butter in a non-stick frying pan or pot, I used my cast iron pot. Sear the meat on every side and put it back into the oven tray. Then sprinkle hoisin sauce on top and some sesame seeds. Cover the oven tray with aluminium foil and put in the hot oven for 25 minutes.
Heat up some olive oil in the wok/pan. Add the beans and let them heat up. After 2 minutes, add the mango slices and the chili flakes and let this heat up together for 1 or 2 minutes max.
