Chanfana de Cabra

Ingredients

  • 1 goat (around 3 kg)
  • 1.5 kg of potatoes
  • 1.5 kg of onions
  • 1.5 dl of olive oil
  • 1.5 dl of red wine
  • 1 bay leaf
  • 1 sprig of rosemary
  • 1 sprig of mint
  • Salt and pepper to taste

Steps

  1. Cut the goat into pieces and season with salt, pepper, bay leaf, rosemary, and mint.
  2. Peel and slice the onions.
  3. In a clay pot, place a layer of onions, a layer of meat, and repeat until all ingredients are used.
  4. Drizzle with olive oil and red wine.
  5. Cover and let marinate for at least 12 hours.
  6. Preheat the oven to 180°C.
  7. Peel and slice the potatoes and add them to the pot.
  8. Cover and cook in the oven for about 2 hours.
  9. Serve hot with a good red wine.
