Piri Piri Chicken Curry Fusion

Ingredients
- 500g chicken, cut into pieces
- 2 tablespoons Piri Piri sauce (adjust to taste)
- 1 cup coconut milk
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 2 tomatoes, diced
- 1 red bell pepper, sliced
- 2 tablespoons olive oil
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Steps
- In a bowl, marinate the chicken with Piri Piri sauce, salt, and pepper. Let it sit for at least 30 minutes.
- In a large pan, heat olive oil over medium heat. Add chopped onions and sauté until golden brown.
- Add minced garlic and grated ginger, sauté for another 2 minutes until fragrant.
- Add the marinated chicken pieces and cook until they are browned on all sides.
- Stir in cumin powder, coriander powder, turmeric powder, and diced tomatoes. Cook until tomatoes are softened.
- Pour in the coconut milk and bring the curry to a simmer. Add sliced red bell pepper.
- Adjust salt and pepper to taste. Cover and let it simmer on low heat for 20-25 minutes until the chicken is cooked through and the flavors meld.
- Garnish with fresh cilantro and serve the Portuguese-Indian Fusion Piri Piri Chicken Curry over rice or with crusty bread.
