Piri Piri Chicken Curry Fusion

Ingredients

  • 500g chicken, cut into pieces
  • 2 tablespoons Piri Piri sauce (adjust to taste)
  • 1 cup coconut milk
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, diced
  • 1 red bell pepper, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Steps

  1. In a bowl, marinate the chicken with Piri Piri sauce, salt, and pepper. Let it sit for at least 30 minutes.
  2. In a large pan, heat olive oil over medium heat. Add chopped onions and sauté until golden brown.
  3. Add minced garlic and grated ginger, sauté for another 2 minutes until fragrant.
  4. Add the marinated chicken pieces and cook until they are browned on all sides.
  5. Stir in cumin powder, coriander powder, turmeric powder, and diced tomatoes. Cook until tomatoes are softened.
  6. Pour in the coconut milk and bring the curry to a simmer. Add sliced red bell pepper.
  7. Adjust salt and pepper to taste. Cover and let it simmer on low heat for 20-25 minutes until the chicken is cooked through and the flavors meld.
  8. Garnish with fresh cilantro and serve the Portuguese-Indian Fusion Piri Piri Chicken Curry over rice or with crusty bread.
