Herb-Crusted Chicken with Rosemary Potatoes

Ingredients
- 2 chicken breasts
- 2 sprigs of thyme
- 1 tomato
- 2 sprigs of rosemary
- 500g potatoes
- olive oil
- salt
- pepper
Steps
- Preheat the oven to 200°C.
- Season the chicken breasts with salt, pepper, and chopped thyme.
- Slice the tomato and place on top of the chicken breasts.
- Sprinkle chopped rosemary on top.
- Roast in the oven for 25-30 minutes, or until chicken is cooked through.
- Meanwhile, cut potatoes into wedges and toss with olive oil, salt, pepper, and remaining rosemary.
- Roast potatoes in the oven for 30-35 minutes, or until crispy and golden brown.
- Serve the herb-crusted chicken with rosemary potatoes.
