Herb-Crusted Chicken with Rosemary Potatoes

Ingredients

  • 2 chicken breasts
  • 2 sprigs of thyme
  • 1 tomato
  • 2 sprigs of rosemary
  • 500g potatoes
  • olive oil
  • salt
  • pepper

Steps

  1. Preheat the oven to 200°C.
  2. Season the chicken breasts with salt, pepper, and chopped thyme.
  3. Slice the tomato and place on top of the chicken breasts.
  4. Sprinkle chopped rosemary on top.
  5. Roast in the oven for 25-30 minutes, or until chicken is cooked through.
  6. Meanwhile, cut potatoes into wedges and toss with olive oil, salt, pepper, and remaining rosemary.
  7. Roast potatoes in the oven for 30-35 minutes, or until crispy and golden brown.
  8. Serve the herb-crusted chicken with rosemary potatoes.
