Mumbai Street Food - Pav Bhaji

Ingredients
- 4 boiled potatoes, mashed
- 1 cup mixed vegetables (peas, carrots, bell peppers), chopped
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 tablespoons pav bhaji masala
- 2 tablespoons butter
- 4 pav (bread rolls)
- Fresh coriander for garnish
Steps
- Cook veggies until soft, mash them.
- In a pan, sauté onions, add tomatoes, and pav bhaji masala.
- Mix in mashed veggies, cook until flavors meld.
- Toast pav with butter.
- Serve bhaji with pav, garnish with coriander.
