Mumbai Street Food - Pav Bhaji

Ingredients

  • 4 boiled potatoes, mashed
  • 1 cup mixed vegetables (peas, carrots, bell peppers), chopped
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons pav bhaji masala
  • 2 tablespoons butter
  • 4 pav (bread rolls)
  • Fresh coriander for garnish

Steps

  1. Cook veggies until soft, mash them.
  2. In a pan, sauté onions, add tomatoes, and pav bhaji masala.
  3. Mix in mashed veggies, cook until flavors meld.
  4. Toast pav with butter.
  5. Serve bhaji with pav, garnish with coriander.
