
Ingredients
- 1 bunch kale, finely chopped
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 200g chorizo sausage, sliced
- 6 cups chicken or vegetable broth
- Salt and pepper to taste
Steps
- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté until softened.
- Add the diced potatoes and chorizo slices to the pot, cook for a few minutes.
- Pour in the broth, bring to a boil, then reduce heat and simmer until potatoes are tender.
- Mash some of the potatoes in the pot to thicken the soup.
- Add the chopped kale to the pot and cook until wilted.
- Season with salt and pepper to taste.
- Serve hot, optionally drizzle with more olive oil, and enjoy this hearty Caldo Verde!
