Salmon Sweet Potato Hash

Ingredients

  • 200g sweet potato
  • 100g carrots
  • 2 salmon steaks
  • 1 onion
  • 2 cloves of garlic
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Steps

  1. Preheat the oven to 200°C.
  2. Peel and dice the sweet potato and carrots into smaller cubes.
  3. Chop the onion and mince the garlic.
  4. In a baking dish, toss the sweet potato, carrots, onion, and garlic with olive oil, paprika, salt, and pepper.
  5. Place the salmon steaks on top of the vegetable mixture.
  6. Bake in the oven for 20-25 minutes or until the salmon is cooked through and the vegetables are tender.
  7. Serve hot and enjoy!
