Bacalhau à Brás (Cod à la Brás)

Ingredients

  • 500g salted cod (bacalhau), soaked and shredded
  • 4 large potatoes, thinly sliced into matchsticks
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup olive oil
  • 4 eggs
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Steps

  1. Boil the shredded cod for 5 minutes. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add the sliced potatoes and fry until golden brown. Remove and set aside.
  3. In the same pan, sauté the chopped onion and minced garlic until softened.
  4. Add the boiled cod to the pan and stir to combine with the onions and garlic.
  5. Stir in the fried potatoes and continue cooking for a few more minutes.
  6. Crack the eggs into the pan and scramble them until fully cooked.
  7. Season with salt and pepper to taste, and sprinkle fresh parsley over the top.
  8. Serve hot and enjoy!
