Bacalhau à Brás (Cod à la Brás)

Ingredients
- 500g salted cod (bacalhau), soaked and shredded
- 4 large potatoes, thinly sliced into matchsticks
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup olive oil
- 4 eggs
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Steps
- Boil the shredded cod for 5 minutes. Drain and set aside.
- In a large pan, heat olive oil over medium heat. Add the sliced potatoes and fry until golden brown. Remove and set aside.
- In the same pan, sauté the chopped onion and minced garlic until softened.
- Add the boiled cod to the pan and stir to combine with the onions and garlic.
- Stir in the fried potatoes and continue cooking for a few more minutes.
- Crack the eggs into the pan and scramble them until fully cooked.
- Season with salt and pepper to taste, and sprinkle fresh parsley over the top.
- Serve hot and enjoy!
