Tropical Coconut Lime Shrimp Tostones

- 1 lb shrimp, peeled and deveined
- 2 ripe plantains
- 1/2 cup coconut milk
- 1 lime, juiced
- 2 cloves garlic, minced
- 1 red chili pepper, finely chopped
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Steps
- In a bowl, combine shrimp with lime juice, garlic, chili pepper, cilantro, salt, and pepper. Marinate for 30 minutes.
- Peel and slice the plantains into 1-inch thick rounds. Heat olive oil in a pan and fry the plantains until golden. Remove and flatten each round with a glass to form tostones.
- In the same pan, cook the marinated shrimp until pink and cooked through. Add coconut milk and simmer for 2-3 minutes.
- Top each tostone with a spoonful of the shrimp coconut mixture.
